The 40°N Difference

The °N measurement is an industry standard to measure the number of grams of nitrogen per liter of fish sauce — an indicator which relates to the protein level. Simply put, the higher quality the fish sauce, the higher the °N. Quality fish sauces are greater than 30°N, as the flavor of the fish sauce becomes more rich and complex with higher °N designation.
