This isn’t your average cottage cheese bowl. Creamy whipped cottage cheese meets sweet-savory simmered beef, crispy-edged sweet potatoes, and all the toppings you crave—finished with a spicy chili crisp kick. Ingredients
- 1/4 cup roasted or air-fried sweet potato (cubed)
- 1/2 avocado, sliced
- 1 cup whipped cottage cheese (blended until smooth)
- 1 lb ground beef

3/4 jar Red Boat Sweet & Savoury Simmer Sauce
- 1 mini cucumber, cubed
- 1 small piece fresh ginger, sliced
- 2 scallions, thinly sliced
- Crispy fried shallots, garnish
- Chili crisp, for drizzling
Directions
Step 1: Simmer the beef
- In a skillet over medium heat, sauté the ground beef with the sliced ginger until browned. Pour in 3/4 of a jar of Red Boat’s Sweet & Savoury Simmer Sauce. Let it bubble gently until thickened and glossy (about 5–7 minutes). Remove the ginger slices before serving.
- Step 2: Roast the Sweet Potato
- If you haven’t already, cube and roast or air-fry the sweet potato at 400°F until golden and crispy (about 10–12 minutes).
- Step 3: Whip the Cottage Cheese
- Add cottage cheese to a food processor or blender and whip until completely smooth and fluffy. Set aside.
- Step 4: Assemble the Bowl
- In a bowl, smear a generous swoop of whipped cottage cheese. Add sweet potato, avocado slices, cucumber cubes, and a hearty scoop of the simmered beef.
- Step 5: Garnish and Finish
- Top with scallions and a drizzle (or dollop) of your favorite chili crisp. Serve warm or at room temp. Leftover beef keeps well in the fridge for future bowls!
