Crispy, savory, and a touch sweet, these maple-glazed brussels sprouts with bacon are the perfect mix of flavors and textures! Roasted brussels sprouts are tossed in bacon fat and seasoned with garlic powder, salt, and pepper. Then, they’re mixed with crispy bacon bits and coated in a luscious maple glaze made with pure maple syrup, a bit of red pepper for a gentle kick, and Red Boat fish sauce to add that rich umami depth. The result is an irresistible side dish perfect for coaxing the pickiest of eaters into eating some vegetables!
Ingredients
- 6oz bacon

1 1/4lb of brussels sprouts
- 1 tsp salt, plus more to taste
- 1/2 tsp black pepper
- 1/2 tsp of garlic powder
- Oil, as needed
- 1/2 cup maple syrup
- 1/2 tsp red pepper flakes

2 tsp Red Boat fish sauce

Directions
Preheat the oven to 400F. Place bacon on a parchment paper-lined baking sheet, ensuring they don’t overlap. Bake for 10-15 minutes until it reaches desired level of crispiness and the bacon temperature reaches 145F. Remove bacon and place on a paper towel to absorb excess grease. Chop into small chunks and set aside. Dispose parchment paper, reserving the bacon grease.
Remove any dead outer layers of the Brussels sprouts, wash thoroughly, pat dry and cut in half. Toss brussel sprouts in the bacon fat, along with some salt, pepper, and garlic powder. Add more oil as needed. Place all brussel sprouts cut side down and roast at 400F for 30-40 minutes until crispy.
- In a pan over medium-heat, add maple syrup, red pepper flakes, and Red Boat Fish Sauce. Bring to a gentle boil and simmer until reduced and thickened. Set aside to cool.
- In a bowl, toss together 1/2 the maple glaze, the Brussels sprouts, and chopped up bacon. Salt to taste. Add more sauce as necessary or leave on the side to use as a dipping sauce.
