Ingredients

¼ cup plus 2 tablespoons freshly squeezed lime juice

¼ cup plus 2 tablespoons water

¼ cup Red Boat Fish Sauce

1 ½ teaspoons granulated sugar

½ inch knob ginger, finely grated

1 small garlic clove

¼ cup grapeseed oil
Directions
In a medium mixing bowl, combine the lime juice, water, fish sauce, sugar, ginger and garlic and whisk until the sugar dissolves. Whisk in the oil in a slow stream until well combined.
The vinaigrette keeps for up to one week in an airtight container in your refrigerator. Whisk again before serving.
