This Peanut Lemongrass Curry Cold Noodle Bowl is a refreshing twist on comfort food, packed with bold, aromatic flavors. Creamy peanut butter and coconut milk blend into Red Boat’s Lemongrass Curry for a rich, savory-sweet broth that’s served chilled for the perfect warm-weather dish. Piled high with soba noodles, crisp veggies, fresh herbs, and crunchy peanuts, it’s finished with tofu and soy-marinated jammy eggs for extra protein. Light, vibrant, and deeply satisfying, this bowl is ideal for slurping on a hot summer day.

Ingredients

12 oz (1 jar) of Red Boat Lemongrass Curry
- 3 tbsp of peanut butter (salted or unsalted, reseason to taste)
- ⅓ cup of coconut milk

2 tbsp of Red Boat Fish Sauce (or adjusted to taste)
- 1 tsp of bouillon powder
- Salt to taste

1 package of soba noodles, or noodles of your choice, cooked as per instructions and chilled

Cucumber, thinly sliced
- Bell peppers, thinly sliced
- Hot chili peppers, thinly sliced
- Cilantro, rough chop
- Roasted salted peanuts, rough chop
- Toasted black sesame

- Soy marinated jammy egg, halved

Directions
As you’re preparing all your toppings (mise en place) pour Red Boat’s Lemongrass Curry into a small sauce pan and place on med-low heat. Add coconut milk, peanut butter, Red Boat’s Fish Sauce, bouillon and whisk until smooth. Let the broth simmer gently for about 15-20 minutes to make sure all the aromatics are cooked through. Optional: add fresh minced garlic for some extra punch or a sweetener of your choice if you like your broths a little more sweet. Thin out with water or coconut water until desired consistency.
- Once broth has simmered, pour back into glass jar or container of choice and allow to cool in the fridge. You can even do this the day or night before so you have chilled broth ready to go. Alternatively, add ice cubes instead of water to speed up the process and make sure you coconut milk is chilled.
- Pile noodles into a wide bowl. Ladle your broth around your noodles like a moat. Add your toppings and make it as pretty as you liked (it’s all going to be mixed and slurped either way!) Don’t forget the roasted peanuts for a great crunch and boost that peanut flavour.
- Need more heat, try adding your favourite spicy chili crisp. Enjoy!
