Ingredients

6-10 shrimp, peeled and deveined, tails removed (optional)
- 2 cups cooked white rice, chilled (day old preferred)
- 3 egg yolks
- 3 egg whites
- 2 chinese sausages, microwaved 1 minute, sliced into bite size pieces
- ¾ cup frozen peas & carrots mix
- 1 shallot, sliced
- 3 cloves of garlic, minced
- 2 scallions, whites & greens separated

1 tbsp Red Boat Fish Sauce
- 1 tsp sugar
- 1 tsp sesame oil
- 1 tsp chicken bouillon powder
- 1 tsp soy sauce
- 2 tbsp of cooking oil
- Salt & Pepper to taste
Directions
Lightly poach shrimp in salted water, about 2-3 minutes or until no longer translucent. Drain and set aside.
- In a bowl or tray, mix egg yolks with rice until evenly coated. Set aside.
- In a nonstick pan lightly oiled, on medium heat, fry egg whites. Remove from pan and when cool enough to handle, slice into bite size ribbons.
- In a small bowl, mix Red Boat Fish Sauce, sugar, sesame oil, soy sauce and chicken bouillon and stir until dissolved.
- Gather all your prepared ingredients (mise en place) to be in reach. Once the wok is hot, this part goes quick!
- Heat oil in a well seasoned walk on medium to high heat. Once the oil is sliding around, you’ll know your wok is ready go.
- Add shallots, garlic and scallion whites and keep stirring to avoid burning. Once aromatic, add in rice and stir fry until well mixed. Pausing once in a while to get some toasted and crispy rice. Continue for 2-3 minutes.
- Add in cooked sausage, shrimp and egg whites and mix thoroughly then add your sauce stirfrying for another 2-3 minutes until sauce is evenly mixed in. Taste and adjust seasonings to taste.
- For beautiful presentation, fill a small bowl with a flat bottom with rice and turn upside down onto a plate creating a lovely dome.
- Garnish with green onions and optionally, your favorite chili crisp. Enjoy!
