For the Fish Sauce Glaze:
Directions
- Preheat your oven to 325°F (160°C) and line a large baking sheet with parchment paper.
- In a small saucepan, combine fish sauce, brown sugar, lime juice, sambal, and sesame oil. Simmer over medium heat, stirring often, until slightly thickened and syrupy (about 3–4 minutes). Set aside to cool slightly—it should still be pourable.
- In a large bowl, toss together garlic corn nuts, wasabi peas, honey twist crisps, crushed ramen, and peanuts (if using).
- Pour the warm glaze over the snack mix and gently toss until everything is evenly coated. Spread the mixture in a single layer on your prepared baking sheet.
- Bake for about 5 minutes, just enough to set the glaze and crisp things up a little more. Keep a close eye—sugar burns fast!
- Once out of the oven, let it cool for a few minutes. Toss with furikake and crumbled roasted seaweed for that extra umami punch.
- Snack immediately or store in an airtight container once cooled (good luck not eating it all at once). Perfect for movie nights, picnics, or just flexing your snack game.
