.66 lbs (300g) elbow macaroni pasta

¾ cup (60g) medium or sharp grated cheddar cheese

¾ cup (60g) grated mozzarella cheese

¾ cup (60g) grated parmesan cheese
- 1 tbsp butter

1 jar Red Boat Lemongrass Curry
- ⅔ cup heavy cream
- Chopped chives
- Cracked black pepper (optional)

Directions
Cook the pasta: Bring a pot of water to a boil and cook the elbow macaroni pasta until al dente. Drain and set aside.
In a pot, melt the butter over medium heat. Add the jar of Red Boat’s lemongrass curry sauce and heat until it starts to bubble.
- Stir in the grated cheddar, mozzarella, and parmesan cheeses along with the heavy cream. Continue to mix until the cheese is completely melted and the sauce is creamy and smooth.
Reduce the heat to low and fold the cooked macaroni into the cheese sauce, mixing until well combined.
- Turn off the heat. Serve hot, garnished with chopped chives and optional cracked black pepper.
