This Father's Day, give Dad the perfect excuse to fire up the grill with our Vietnamese Grilled Mussels! Treat him to the bold flavors of fresh mussels topped with aromatic scallion oil, zesty homemade dipping fish sauce, and a sprinkle of crushed, toasted peanuts. Ingredients

2lbs (900g) mussels (fresh or frozen)
- 3 tbsp neutral oil
- 6-8 scallion stalks, chopped
- Pinch of salt
- 1/2 cup boiling/warm water
- 1/4 cup sugar
- 1/4 cup lime juice or vinegar

2 tbsp Red Boat fish sauce
- 1-3 cloves of minced garlic
- 1-2 Thai chilis, sliced

Toasted peanuts, crushed
For the scallion oil
For the Dipping Fish Sauce
Directions
Make the Scallion Oil. Heat the oil in a pan over medium heat.
- Add the chopped scallions and cook for 2-3 minutes until they become aromatic.
- Add a pinch of salt, stir to mix, then remove from heat and set aside.
Prepare the Dipping Fish Sauce. In a bowl, combine the boiling water, sugar, lime juice or vinegar, fish sauce, minced garlic, and Thai chilis. Stir until the sugar has dissolved completely. Set aside.
Grill the Mussels. Preheat the grill to 375°F.
- Place the mussels on a grill tray and close the grill lid. Cook for 5 minutes.
- Open the lid, and carefully spoon the scallion oil over each mussel.
- Continue grilling with the lid open for another 5 minutes.
Remove the mussels from the grill and transfer to a serving plate.
Spoon some dipping fish sauce into each mussel and top with crushed toasted peanuts.
