This shepherd’s pie is a cozy, flavorful twist on the classic. The ground beef simmers with onions, garlic, and our Spicy Lemongrass Curry Simmer Sauce, giving it a warm, slightly spicy depth. A simple mashed-potato topping adds another comforting layer and is finished with scallion oil and crunchy peanuts, making it an easy, satisfying dish that still feels a little special.

0.75-1 lb lean ground beef
- 1 cup yellow onion, chopped
- 1 tbsp garlic, minced
- 2 tbsp shallot, minced
- ¾ cup frozen peas and carrots
- 1 tbsp Madras yellow curry powder
- 2 tbsp all-purpose flour

¼ cup Red Boat Spicy Lemongrass Simmer Sauce
- ½ cup beef broth
- 1 tsp salt
- 1 tsp ground black pepper

2 cups mashed potatoes
- 1 tsp salt
- 1 tsp garlic powder
- ½ tbsp butter

Directions
Heat up oil in a large skillet and place on medium high heat. Sautee onions, garlic, and shallots for 2 mins.
- Add ground beef to the skillet, season with salt and pepper, and cook for 5 mins. Add in the curry powder and flour then cook for 1 min.
- Add in the Red Boat Spicy Lemongrass Simmer Sauce and let it cook for 2 mins.
- Add in beef broth, frozen peas and carrots, and let the liquid simmer and reduce for up to 5 minutes, stirring occasionally.
- Set meat aside, prep it in an oven-safe dish, and preheat oven to 400F.
- To prep the potatoes, roast them until soft then peel the skin and mash them up.
- Season the potatoes with salt, garlic powder, butter, and a dash of fish sauce.
- Layer the potatoes on top of the ground beef in the baking dish, then bake uncovered for 25-30 mins in the oven.
- Once it’s done, let the shepherd’s pie cool for around 5 minutes, garnish with scallion oil and peanuts, then serve.
