Ingredients
- 1 cup unsalted butter, melted
- 1 cup granulated sugar
- 4 large eggs
- 2 tsp vanilla extract
- ⅔ cup unsweetened cocoa powder
- 1 cup all-purpose flour
- ½ tsp salt
- ½ tsp baking powder
- 1 cup sugar
- 1 cup heavy cream

- ½ tsp sea salt (plus extra for sprinkling on top)

Directions
- Preheat your oven to 325°F. Grease and line an 8x8 inch baking pan with parchment paper.
- In a large bowl, combine the melted butter and granulated sugar. Stir until well blended.
- Add the eggs and vanilla extract, mixing well after each addition.
- Sift in the cacao powder, all-purpose flour, salt, and baking powder. Mix until just combined; do not overmix.
- In a medium saucepan, heat the sugar over medium heat, stirring constantly with a heat-resistant spatula or wooden spoon. Sugar will form clumps and eventually melt into a thick brown, amber-colored liquid as you continue to stir. Be careful not to burn it.
- Once sugar is completely melted, carefully add the heavy cream (the mixture will bubble vigorously) and stir until sugar is fully dissolved. Remove from heat.
- Stir in the fish sauce and sea salt. Allow to cool slightly.
- Pour the brownie batter into the prepared pan.
- Drizzle half of the fish sauce caramel over the batter. Use a knife to swirl the caramel into the batter.
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
- Let the brownies cool in the pan. Once cool, drizzle the remaining caramel over the brownies.
- Serve each piece with a scoop of vanilla ice cream and an extra drizzle of caramel along with a pinch of flaked salt
