If you want crispy chicken thighs, try this recipe! Skin-on chicken thighs are rendered slowly in a cold pan, ensuring perfectly golden, crunchy skin. These are packed with flavor and are great served with rice or noodles for a truly satisfying meal.

Ingredients
- 2lbs skin on chicken thighs, bone removed
- 1 ½ tsp salt
- ½ tsp black pepper

2 tbsp Red Boat Fish Sauce
- 2 tbsp lime juice
- 1/2 cup sugar
- 1/2 cup water
- 6 garlic cloves, minced
- 1 Thai chili, minced
Fish Sauce Glaze
Directions
Salt the skin side of the chicken thighs. Place the chicken, skin side down on paper towels. Salt and pepper the other side and allow it to sit for 15 minutes until the chicken has absorbed the salt.
- Pat the chicken skin dry and place the chicken, skin side down in a cold cast iron pan. Turn the heat to low and allow the chicken skin fat to render until crispy, about 10-15 minutes. Remove from pan onto a cooling rack. Allow to rest for 5-10 minutes.
- In a pan, add Red Boat Fish Sauce, lime juice, sugar, water, garlic and Thai chili. Bring it to a boil until the sauce reduces and thickens, about 10 minutes.
- To serve, drizzle the fish sauce glaze on the chicken. Enjoy over rice or rice noodles with fresh herbs and veggies.
