Chicken Lettuce Wraps

Ground chicken is tossed in a rich amber caramel, then cooked with garlic, shallot, and cabbage before being coated in a glossy, umami-packed sauce. Ingredients

1lb ground chicken

3 tbsp sugar

2 tbsp oil

½ small cabbage, diced

½ shallot, finely diced

2 garlic cloves, minced

2 scallions, sliced, greens and whites separated

2 tbsp Red Boat Fish Sauce

1 ½ tbsp dark soy sauce

½ cup water
-
3 tsp potato starch
-
2 cucumbers, diced

Boston lettuce, for serving

Black pepper, to taste

Lime, optional for serving
Directions
In a pan over medium low heat, add oil and sugar. Give it a toss to combine. Allow for the sugar to melt and caramelize into a deep amber color.
Add ground chicken and quickly toss it in the caramelized sugar. Use a wooden spatula to break it up into smaller pieces.
Add in garlic, shallot, and cabbage. Saute until slightly softened and excess water has evaporated. Stir in Red Boat Fish Sauce, dark soy sauce, and black pepper until thoroughly mixed.
In a small bow, mix together water and potato starch until dissolved. Stir the potato starch slurry into the pan and bring it to a gentle boil until slightly thickened. Stir in scallion whites.
To serve, scoop ground chicken mixture into boston lettuce leaves and top with cucumbers, scallions and optional lime.
