Ingredients (4 servings)
- 1.5 lbs bone in chicken thighs and/or drumsticks
- 1 lb potatoes
- 1 medium white onion
- 1/2 cup coconut milk
- 1 jar of Red Boat Vietnamese Lemongrass Curry sauce
- Vegetable oil
- Cilantro for garnish
Directions
- Peel and cut potatoes into bite-sized cubes.
- Thinly slice onion.
- Heat a large pot on medium and add a thin layer of oil.
- Generously salt the chicken.
- Add chicken to the pot in a single layer skin-side down and sear until golden.
- Flip and sear the other side.
- Add Red Boat Lemongrass Curry sauce, potatoes, and coconut milk.
- Stir in the coconut milk and make sure the potato pieces are submerged in the sauce.
- Reduce heat to medium low and simmer covered for 20 minutes.
- Add onion and simmer for another 15 minutes.
- Serve immediately with rice or baguette.
