Ingredients (4 servings)

  • 1.5 lbs bone in chicken thighs and/or drumsticks
  • 1 lb potatoes
  • 1 medium white onion
  • 1/2 cup coconut milk
  • 1 jar of Red Boat Vietnamese Lemongrass Curry sauce
  • Vegetable oil
  • Cilantro for garnish


  • Peel and cut potatoes into bite-sized cubes.
  • Thinly slice onion.
  • Heat a large pot on medium and add a thin layer of oil.
  • Generously salt the chicken.
  • Add chicken to the pot in a single layer skin-side down and sear until golden.
  • Flip and sear the other side.
  • Add Red Boat Lemongrass Curry sauce, potatoes, and coconut milk.
  • Stir in the coconut milk and make sure the potato pieces are submerged in the sauce.
  • Reduce heat to medium low and simmer covered for 20 minutes.
  • Add onion and simmer for another 15 minutes.
  • Serve immediately with rice or baguette.
