Ingredients:
- 2 tbsp neutral oil
- 1 shallot, roughly chopped
- 3-4 garlic cloves, roughly chopped
- 1-2 Thai chili peppers
- 1 lb ground pork (beef or chicken can also be used)
- 1 jar Red Boat caramel simmer sauce
- 3 scallions, chopped
For Plating:
- Fresh cucumbers, sliced
- Fresh tomatoes, sliced
- Fried egg (optional)
Directions:
- Prepare the aromatics by chopping the shallots, garlic, and Thai chili peppers.
- Heat oil in a medium pot over medium heat. Sauté the chopped aromatics until fragrant.
- Increase the heat, add the ground pork, and sear quickly to add crispiness.
- Once the pork is seared, add the Red Boat caramel simmer sauce. Allow the mixture to simmer on medium-high heat to reduce the sauce, about 5-7 minutes.
- Serve over a bed of fluffy white rice with fresh cucumber and tomato slices. Optionally, top with a fried egg.
