Ingredients
- 2 eggplants

1 jar of Red Boat Vietnamese Simmer Sauce
- Cilantro, chopped
- Toasted sesame seeds
Directions
Cut the eggplants into 1-inch slices.
- Score each piece with a knife to create a decorative pattern.
Heat a little oil in a pan over medium heat.
- Pan sear the eggplant slices in batches until nicely charred.
- Set aside the seared eggplants.
Return all the seared eggplant slices to the pan.
Add Red Boat Vietnamese Simmer Sauce to the pan.
- Cover with a lid and let simmer on medium-low heat for 15 minutes.
Remove the lid and let the eggplants simmer for another 5 minutes to reduce the liquid.
Garnish with chopped cilantro and sprinkle toasted sesame seeds on top.
- Serve with white rice as a side dish or enjoy on its own.
