Braised Pork Belly with Egg

1 pound pork belly, sliced to 1" cubes
1/2 cup Red Boat Kho Sauce
4 soft boiled eggs


  1. Add Red Boat Kho Sauce to a pot. Over medium-high heat, bring the sauce to a boil.
  2. Add the pork to the pot. Stir to coat the pork in the sauce, about 5 minutes.
  3. Add1/2 cup water to a pot. Cover and bring the pot to a boil, then turn down the heat and simmer until the pork is tender, about 20-30 minutes.
  4. Once the pork is tender, remove the lid, add the eggs and simmer for 10 minutes.
  5. Serve with rice.
