Halloween Stuffed Peppers

These spooky stuffed peppers are the perfect blend of savory, sweet, and a little heat! Loaded with a flavorful pork and rice filling, and baked to perfection, they’re a fun and festive way to celebrate fall. Don’t forget to carve those Jack-o-lantern faces for an extra Halloween touch!
Ingredients
- 1/2 small onion, diced
- 2-3 scallions, sliced, greens and whites separated
- 1 shallot, minced
- 4 garlic cloves, minced
- 1 1/2 cups of rice, cooked
- 1/2 inch knob of ginger, finely minced
- 1 pound ground pork
- 1 Thai chili, minced
- 3 tbsp brown sugar

2 tbsp Red Boat Fish Sauce
- 1/2 tsp black pepper
- 6 bell peppers, tops cut, inside cleaned and carved into Jack-o-lantern faces
- Mozzarella cheese, optional
- Parmesan cheese, optional
Directions
In a pan over medium-low heat, add oil and onions. Sauté until slightly softened and add in shallots, bell pepper scraps from carving, scallion whites, ginger, garlic and Thai chili. Sauté for 2-3 minutes.
- Add in ground pork and break it up into pieces using a spatula. Add in brown sugar, black pepper and Red Boat Fish Sauce.
- Add in scallion greens and give it a stir. Add in Parmesan cheese and mozzarella cheese, as desired. Add in rice and mix to combine.
- Add the pork and rice filling to the carved peppers and bake at 400F for 15-20 minutes until the peppers have softened slightly and the cheese has melted. Remove and enjoy!
