Ingredients (4 servings)
- 1.5 lbs stewing beef (e.g. chuck steak)
- 1 lb carrot
- 1/2 cup frozen green peas
- 1 jar of Red Boat Spicy Lemongrass Curry sauce
- Vegetable oil
- Cilantro for garnish
Directions
- Cut beef into 1-1.5 inch cubes and salt generously.
- Heat a large pot on medium and add a thin layer of oil.
- Add beef in a single layer and sear until lightly brown.
- Flip the cubes and sear on the other side.
- Add Red Boat Spicy Lemongrass Curry sauce.
- Reduce heat to low and simmer for 40 minutes.
- Peel and cut carrots into bite-sized pieces.
- Add carrots to the curry and cook for another 30 minutes.
- Add green peas and simmer for another 10 minutes or until the carrots are tender.
- Serve immediately with rice or baguette.
