Ingredients
- 3 lbs ribs, preferably riblets
- 1 lb cut pineapple (~2.5 lb whole pineapple)
- 2 tbsp shallot
- 1 tsp salt
- 1 tbsp vegetable oil

1 jar Red Boat Sweet & Savory Simmer Sauce
Directions
If using whole pineapple: peel, remove the eyes and core, and cut into bite-sized pieces.
- Add ¼ of the pineapple to a blender and blend until smooth.
- Add the blended pineapple to a strainer placed over a bowl.
- Using a spoon or spatula, stir the blended pineapple to get the liquid part to strain through. Discard the remaining solids in the strainer and set the bowl aside.
- Thinly slice shallot.
- Add the ribs to a pot, along with the salt and enough room-temperature water to cover the ribs.
- Bring to boil on medium high, let parboil for 3-4 minutes, then strain and rinse the ribs.
- Heat a large pan on medium, add oil, and sauté the shallot until fragrant (about 30 seconds).
- Add in the ribs and cook, stirring until the edges start to brown slightly.
- Pour in the blended pineapple and stir to coat.
- Pour in the Red Boat Sweet & Savory Simmer Sauce and stir to coat.
- Cover the pan with a lid, reduce heat to medium low, and simmer for 20 minutes- stirring every 5 minutes.
- Add in the cut pineapple pieces and continue simmering for 10 minutes without the lid, stirring halfway through.
- Remove from heat and serve immediately with rice.
