Melting Cabbage Curry

This melting cabbage curry transforms cabbage into a rich, deeply savory dish by roasting thick wedges until tender and caramelized, then finishing them in our fragrant Spicy Lemongrass Curry Simmer Sauce. Ingredients
- 1 green cabbage
- 1 Tbsp avocado oil
- 1 shallot, minced
- 2 Tbsp garlic, minced
- ⅓ cup onion, chopped
- 1 cup chicken broth
- 1 cup coconut milk

¼ cup Red Boat Spicy Lemongrass Curry Sauce

1 Tbsp Red Boat fish sauce
- 1 Tbsp gochugaru
- ¼ tsp salt
- 1 tsp black pepper
Directions
Preheat oven to 350F.
Cut cabbage into 4 wedges., making sure to cut off the bottom core.
Sear for 3-4 mins on each side over medium heat in a large oven-safe pan with avocado oil.
Remove from heat and add in onions, garlic, and shallots to the same pan.
Add in the seasonings: chicken broth, coconut milk, Red Boat spicy lemongrass curry sauce, Red Boat fish sauce, gochugaru, salt, and black pepper. Stir over low heat for 2-3 mins until sauce is fully combined.
Add back the cabbage and cover the pan with foil.
Cook in the oven for 50 mins.
