Ingredients

1 lb shrimp, deveined, shell on
- 1-2 Tbsp cornstarch
- 1 tsp paprika
- 8-10 cloves of garlic, minced

4 tbsp unsalted butter
- 1 tsp chili flakes

1 Tbsp Red Boat fish sauce
- 2-3 Tbsp fresh lemon juice (half a lemon)
- Parsley, chopped
- Oil for frying
Directions
Use a paper towel to remove as much moisture from the shrimp as possible.
- Place the shrimp in a mixing bowl and add cornstarch and paprika. Mix well until all the shrimp are evenly coated.
Heat oil in a frying pan to 350°F (175°C).
- Fry the shrimp for 2 minutes on each side until they form a crispy exterior.
- Remove the shrimp and set aside on a wire rack to drain excess oil.
In the same pan, melt the unsalted butter.
- Add the minced garlic and cook until aromatic, being careful not to burn it.
- Add chili flakes and stir for a few seconds.
Turn off the heat and add the fried shrimp back to the pan.
- Pour in the fresh lemon juice and Red Boat fish sauce. Toss well to coat the shrimp with the sauce.
Plate the shrimp and sprinkle with chopped parsley. Enjoy the shrimp on its own as an appetizer or serve over white rice.
