Ingredients
- 2 garlic cloves, minced
- ½ yellow onion, diced
- 1 jalapeno, diced
- 1 bell pepper, diced
- 6oz tomato paste
- 1lb ground beef
-
3 tbsp Red Boat Fish Sauce
- ½ tsp salt, plus more to taste
- 3 tbsp chili powder
- 1 ½ tsp chipotle chili powder
- 1 tbsp smoked paprika
- 2 tbsp brown sugar
- 2 tsp cumin
- 1 tbsp oregano
- 28oz canned crushed red tomatoes
- 2 cup of water
- 15.5oz canned kidney beans
- Optional toppings: cheese, scallions, cilantro, jalapenos, sour cream, corn chips
Directions
In a large pot or dutch oven, add neutral oil, diced onions, diced bell pepper, minced garlic, and diced jalapeno. Saute until softened, 2-3 minutes.
- Add tomato paste and saute for a few minutes, until color darkens slightly.
- Add in ground beef and break it apart with a spatula or meat chopper. Add in Red Boat Fish Sauce, ½ tsp salt, chili powder, chipotle chili powder, smoke paprika, brown sugar, cumin, and oregano. Mix to combine.
- Add in canned crushed red tomatoes and water. Mix well and stir in beans.
- Bring to a boil and reduce a simmer, covered, for 45 minutes to an hour. Stir occasionally. After an hour, uncover and simmer for another 15-30 minutes or until chili has thickened. Season with more salt to taste. Enjoy with sour cream, cheese, pickled or fresh jalapenos, cilantro, scallions, and or corn chips.
