French Onion Mushroom Dip

Dips are indulgent, but who says they also can't be packed with protein? This french onion dip has a twist - it's got fish sauce for umami, and, it replaces sour cream with silken tofu, making this a healthier option without sacrificing flavor!
Ingredients

2 tbsp butter
- 1 tbsp garlic, minced
- 1 ½ white onions, diced
- ¾ cup shiitake mushrooms, minced
- ½ tsp salt
- ½ tsp black pepper

2 tsp Red Boat Fish Sauce
- ¼ tsp gochugaru
- ½ block silken tofu
- ⅓ cup mayo
Directions
Melt butter and sauté garlic in a large pan over medium heat for 1 min.
- Add in the onions and cook for 15 minutes.
- Add in the mushrooms and cook for another 15 minutes.
- Lower heat. Add in the salt, black pepper, fish sauce and gochugaru. Cook for another 5-10 minutes.
- Blend tofu in a food processor until smooth.
- In a large mixing bowl, combine the onions, mushroom, tofu, and mayo.
- Serve with chips, veggies, or crackers for dipping.
