Ingredients
- 1-2 lbs salmon filet (cubed)
- 2 Tbsp cornstarch (for coating salmon)
- 2-3 Tbsp oil (for searing salmon pieces)

1 jar Red Boat’s Vietnamese Simmer Sauce
- ¼ cup fresh ginger (julienned)
- 1 large mango (diced)
- ½ medium red onion (diced)
- 1 red bell pepper (diced)
- 1 large avocado (diced)
- ½ - 1 cup cilantro (chopped)
- 1 lime (juiced)
- Salt & pepper to taste
For the mango salsa
Directions
Cut salmon into small cubes and coat each piece in cornstarch.
- Heat oil in a pan and sear the salmon cubes until they are crispy and golden on the outside.
- If there’s excess oil in the pan, carefully remove it using a paper towel.
- Pour in 1 jar of Red Boat’s Caramelized Simmer Sauce and allow it to simmer on medium-low for 10 minutes.
- While the salmon is simmering, prepare the mango salsa by mixing diced mango, red onion, red bell pepper, avocado, cilantro, lime juice, and seasoning with salt and pepper.
- Serve the caramelized salmon over jasmine rice and top with the fresh mango salsa.
