The salad is accentuated with tangy, homemade pickled radishes, which add an extra layer of flavor and crunch. Perfect for a light lunch or as a side dish, this salad offers a harmonious blend of savory, sweet, and acidic notes, making it a delightful addition to any meal.
Ingredients
- 1 ½ cups orecchiette, or pasta of choice
- 2 tbsp sugar
- ¼ cup vinegar
- ⅓ cup of hot water
- ½ tsp salt
- 1 cup of radishes, thinly sliced

4 tsp Red Boat Fish Sauce
- 2 tbsp honey
- 2-3 tbsp apple cider vinegar
- ⅓ cup olive oil
- ¼ tsp black pepper
- ¼ tsp red pepper flakes
- 1 inch knob of ginger, finely grated
- Salt to taste
- 1-2 scallions, greens only, sliced
- 2 cups of arugula
- 4oz cherry tomatoes, halved
- ¼ cucumber, diced
- ¼ red onion, diced
- 1-2 small carrots, shredded
- Cilantro leaves

Directions
In a large pot, add water and bring to a boil. Salt the water with 2 heaping teaspoons of salt. Cook pasta according to directions on the package. Once cooked, drain and rinse with cold water.
- In a heat safe cup or bowl, add sugar, hot water, vinegar, and salt. Stir to dissolve sugar and salt. Add in thinly sliced radishes and allow to sit at room temperature while you prepare your pasta salad.
- In a jar, add Red Boat Fish Sauce, honey, apple cider vinegar, olive oil, black pepper, red pepper flakes, and freshly grated ginger. Add the lid on and give it a shake. Salt to taste.
- In a large bowl, add your drained pasta, arugula, shredded carrots, halved tomatoes, diced onion, diced cucumbers, and some of the pickled radishes. Note, you might not use all of the pickled radishes. Add some of the dressing and give it a gentle toss. Enjoy immediately or refrigerate for 30 minutes to allow it to cool and then enjoy. Add more dressing as desired.
