Grilled Pork and Octopus Lettuce Wraps


Herb and Lettuce Salad with Lime Dressing

1 oz. Red Boat Fish Sauce
2 oz. fresh lime juice
4 oz. Extra Virgin Olive Oil

Combine fish sauce and lime juice in a mixing bowl. Whisk in olive oil in a slow stream to emulsify. Serve with fresh herbs and butter lettuce.


Marinated Octopus

4 blocks palm sugar
400 grams lime juice
100 grams fish sauce
150 grams sambal
100 grams shallot
20 grams ginger
200 grams grapeseed oil

Puree all ingredients in blender until smooth. To marinate octopus: use 2 Tbsp. marinade per 4 oz portion of octopus in bag. Mainate and grill on high heat.


Viet Pork Marinade

1 cup sugar
2 oz. water
2oz fish sauce
2 oz lime juice
2 teaspoons black pepper
1 stalk lemongrass chopped
2 Tablespoons sambal
½ cup grapeseed oil

1. Put sugar in small sauce pot and place over low heat. Bring to a medium caramel. Do not stir pot.
2. Carefully pour water into pot to melt caramel. Place on low heat until caramel is completely dissolved.
3. Combine caramel and remaining ingredients in blender and puree.
4. Marinade pork overnight and grill on high.


Nuoc Cham Dipping Sauce

2 cloves garlic
1 oz sambal
1 cup lime juice
110 grams palm sugar
½ cup fish sauce
1 inch ginger peeled

Microplane garlic and ginger into blender canister. Add remaining ingredients and blend.
