Shrimp Pad Thai

To Serve

1 ea egg
7 ea shrimp
8 ea tofu, cut ¼” and pan fried crispy
1 T minced shallots
1 Tbl Pickled radish
1 tsp Garlic, minced
1 Tbl Sambal Olek Chili Paste
½ bag pad thai noodles(rice stick M), soaked in water until soft
¼ cup green onions
½ Cup bean sprouts
¼ Cup shredded carrots
3 oz Pad Thai sauce
2 Tbl Roasted peanuts
1 Tbl Ea Pickl 1 ed bean sprouts (red and Yellow)
1 ea Lime wedge With Crushed Red Pepper
1 sprig Cilantro

• In wok-heat 1oz oil, add egg and scramble, then shrimp (30 sec)
• Add sambal, tofu, shallots, and radish and mix well (15 sec)
• Next add noodles and sear (30 Sec)
• Add sauce and cook 1 minute to incorporate sauce into noodles
• Add Bean sprouts, carrots, and Green onions and remove from heat
• Garnish with roasted crushed peanuts, pickled bean sprouts and lime wedge

Pad Thai Sauce

5 tbl Red boat palm Sugar
4 Tbl Tamarind Puree
5 Tbl Water
4 Tbl Red Boat Fish Sauce

• Combine and bring to boil to dissolve sugar.
• Remove from heat.
